Oh boy, I can easily say we have all probably been there. Waiting for a phone call that is never going to come. I spent last week trying to go through my life while checking my phone more often than reasonably healthy, hoping for that one name to pop up on my screen. Rejection is a painful feeling.
This cookie is the result of craving something sweet and comforting. It is dedicated to letting to go of what no longer serves me (us) and is a celebration of what really matters, self love and appreciation.
The I Love Me cookie is paleo, raw and completely and utterly delicious and fulfilling. A lemon-walnut cookie sandwiched with a poppyseed-raspberry creme. Supplying cravings with healthier treats is extremely rewarding. What’s a better way to pamper yourself than with an I Love Me Cookie??
I Love Me Cookie
yields x 2 cookies
3 Dates – pitted and soaked for 20 minutes
1 cup walnuts
pinch of salt
zest of one whole lemon
Process all in food processor until a crumbly dough forms.
Pour onto a piece of parchment paper and kneed into a ball. Roll the ball out between two pieces of parchment paper, leaving the dough fairly thick. If you roll the dough too thin, the hearts will break.
With a medium size cookie cutter (preferably a heart…. it gets the point across), cut four hearts out. Roll the remaining dough into balls and eat it.
Place the hearts in the freezer while you make the filling.
1/4 cup fresh raspberries
1 TBSP coconut oil
1 TBSP (heaping) poppy seeds
1/4 – 1/2 tsp maca (optional – but necessary if you feeling pretty low)
Process all in food processor until well incorporated.
Spread onto two cookies and make a sandwich with the other two naked cookies.
Freeze for 20 – 40 minutes.
