I am a big fan of pinterest and spend a good chunk of my time perusing the “food & drink” section. Pinterest is a beautiful smorgasbord of recipes ranging from vegan delights to somebodies famous baby back ribs to weight watchers chicken pot pie then the uber naughty oreo cookies wrapped in chocolate chip cookie dough baked into a brownie and then pipped with buttercream frosting.
This creation of a cauliflower pizza is something I found on pinterest. The idea is simple, cauliflower mixed with egg and some spices then pressed into a circular pancake. The egg creates a spongelike crust that is crispy on the outside and soft in the middle. Baking the cauliflower turns it into a creamy delight, without much flavor allowing for the opportunity of spices to be endless.
Yields two 9″ crusts
1 head cauliflower
2 TBSp olive oil
1/2 TBSP italian seasoning
1/2 tsp salt
1/4 tsp black pepper
Preheat oven to 400 degrees.
Cut the cauliflower into florets and pulse in food processor. If you don’t have a food processor, you can do this in the blender or just chop very fine.
Whisk the eggs, olive oil and seasonings together. Add the cauliflower.
