It is finally here, the perfect Sunday afternoon hiking snack! They are substantial and oh, so tasty! They last for about a week un-refrigerated, and if they happen to make it to the bottom of your backpack while your tromping around, they are just as delicious all smashed up! The highlighted ingredient in these winter cookies is Kabocha. Known as the Japanese pumpkin, it is now my favorite squash. It has a rich, sweet, thick texture. Much heavier than that of a butternut or acorn squash.
