Bacon Chocolate Chip Cookies…. taking chocolate chip cookies to the next level.
Definitely something every non-vegetarian should try once.

Bacon Chocolate Chip Cookies
- 1 lb bacon
- 3/4 cup butter
- 1/4 – 1/3 cup rendered bacon fat
- 1 cup packed brown sugar
- 1 cup sugar
- 2 eggs
- 1 tsp vanilla
- 1 1/2 tsp baking soda
- 3 cups flour
- 2 cups semi-sweet chocolate chips
Preheat oven to 350.
Bake bacon on a cooking sheet with a lip so that the fat does not drip out for 10 – 15 minutes, or until bacon is crispy but not burned. Reserve fat. Chop bacon into “bacon bit” size pieces.
Cream both sugars, butter and cooled reserved bacon fat in standing mixer. Slowly add in one egg at a time. Add vanilla.
Sift in flour with baking soda. Mix until well incorporated.
Hand mix in chocolate chips and bacon.
Drop rounded spoonfuls or 1 oz scoops onto baking sheet.
Bake for 10 – 12 minutes.
