Yesterday, I spent the morning with our dear friend Raouf who is from Egypt. He gave me a personal cooking class on making Fool, which is an Egyptian breakfast staple. The dish is similar to the well known Mexican refried beans, but has a bit more flavor and herbs.
The cooking starts off the night before where 2 cups of fava beans are cooked with 1/2 cup of split red lentils, one tomato, carrot and onion (water filled 3x the measure of ingredients). This is all done in a pot called a dammassa.
