Hippies know what’s up when it comes to granola. The stuff you can purchase in the store is way over priced and not very good. Making your own granola is so easy and so extremely delicious. It is such a good way to start your morning right or to enjoy as a sweet afternoon snack.
4 cups oats
2 cups unsweetened dried coconut flakes
1 cup sesame seeds
2 cups chopped walnuts
1 T cinnamon
3/4 cup oil
1/4 – 1/2 cup honey or maple syrup
3/4 cup currants
couple pinches of salt
Pre-heat oven to 200 degrees.
The bottom rack is your worst enemy when making granola, so move your oven racks higher up and avoid the bottom like the plague.
Combine oats, coconut, sesame seeds, walnuts and cinnamon in a large bowl.
Heat the oil and the honey in a small pot on the stove so that the consistency is looser (not a loser) and easier to work with.
Stir the honey mixture into the dry mixture till well combined.
Spread out evenly onto 2 sheet trays.
Bake for about 25 – 40 minutes, stirring occasionally. The granola will be slightly darker in color and extremely fragrant when ready.
When cooled, stir in the currants.
Looking to jazz up your granola? Try adding different spices like ginger, allspice, nutmeg, chipotle or chili powder. Substitue the nuts for pecans, almonds, or some pumpkin seeds and try adding different kinds of dried fruit like apple, banana, or candied ginger. Your friends will be so impressed!
