Curried Sweet Potato Soup
1 medium sweet potato, cubed
2 medium carrots, cubed
2 celery stalks, diced
1/2 onion, diced
3 garlic cloves, minced
1/2 cup full fat coconut milk
Massage onion with 1/2 tsp salt.
Saute sweet potato, carrots and celery in oil for 10 min in coconut oil.
Add onion, saute 5 more min.
In separate dish, heat up 1.5 tsp oil. Saute garlic and spices for one minute.
Add in about 3.5 cups water or stock bring to a boil
Add the coconut milk and Cook until tender at a medium simmer
Puree and serve
