This awesome recipe is so simple to throw together on a busy week night. Keep it in the fridge and use on salads, sandwiches, savory summer squash fritters stuffed with brie….. ooohhh yumzo! That might need to be added to my list of “to make.”
I make this like pretty much every week and toss it with mixed greens, goat cheese, shredded zucchini and pulled chicken. MMM hmmmm!
Basil Balsamic Dressing
Prep Time: 45 seconds… seriously!
Cook Time: 30 seconds (to whizz with the immersion blender)
Servings – Makes a little under 1/2 cup of dressing
- 1/3 cup good quality olive oil
- 1 cup fresh basil
- pinch of salt
- 1 – 2 bulbs of garlic, peeled
- 2 T balsamic vinegar
Place everything in immersion blender and blend until smooth.
**If you don’t have an immersion blender**
Finely chiffonade the basil (aka cut it really small) and mince the garlic.
Combine basil, salt, garlic and balsamic in a bowl. Use a beater or an electric whisk and very very slowly add in the oil. This will immerse the oil and create a creamier dressing that should not separate.
If you don’t want to do that, toss everything in a mason jar and shake it like crazy. You will need to shake the dressing before each use.
