Man, I sure love me some ice cream on a hot summer day! As much as I enjoy going to Sweet Cow here in Boulder and getting Cookies N’ Cream, I know I feel a WHOLE lot better making this easy ice cream at home. Call me crazy, but I love putting foods in my body that support me. The base is frozen bananas, so it is very sweet but more of a “whole food.” It has a little fat in it to help with the sugar content and a heaping amount of cinnamon which helps lower blood sugar levels….. does that mean it evens out? I like to think so.
No dairy to be seen which makes this treat vegan. And it is paleo. And grain free. And gluten free. And no added sugars. Win. Win. Win. Win… Win!
